I've Been Meaning To Tell You. (02.25.11)

Gourmande in the Kitchen.  I met Sylvie on Twitter.  We tweeted back and forth and then I clicked over and really had a good look at her site.  I was blown away for the stunning photography and the simple, but elegant, recipes.  (You probably already read GITK, but if you don't, you should.)


Sweet Mary is a blogger I met because she left a comment over here.  I am sooo happy she did.  I love her blog, Passing The Thyme.  She is--get this--15 years old.  Her photography is beautiful.  And her recipes!  Do you know what I was doing with my spare time when I was 15?  Working at TacoTime.  (I know.)

I woke up to about 6" of snow this morning.  I should really pay attention to the weather report.  We had no idea.  Today we're staying in.  I made whole wheat buttermilk pancakes and hot chocolate for the kids' breakfast.  The pancakes were a little more stick-to-your-ribs than normal.  But they were washed down nicely with the hot chocolate.

Creamy Roasted Red Pepper Pasta.

Remember when I made a batch of Cashew Sour Cream from The Vegan Table?  It made a lot of sour cream and for days I was dreaming of ways to use it.  One day I looked in my fridge and did some quick math.  

Baby arugula + red peppers + cashew sour cream + x + y = z.  

Or something like that.  I was missing a few variables and I've never really been that great at algebra anyway.  The cupboard provided me with x and y in the form of pasta and black olives.

Twenty minutes later I had a pretty great vegan, gluten-free pasta dish.


I've been trying different brands of gluten-free pasta. I really like the brown rice pasta I tried a few months ago, but I decided to give corn/rice pasta a try. I can't remember where I bought this, but it could have been Target or Walmart.  (The prices for GF pasta are the best at Target.)  It is made in Italy and so that gives it some street cred in my book.


It didn't stick together after it was cooked quite as much as the plain rice pasta.  It had great mouth feel--practically like wheat pasta.  Obviously use whatever pasta you like the best or have on hand.


I really love red peppers.  I wish they were a bit cheaper...but that goes without saying.  If you buy them regularly, you know what I mean.  It is sometimes more economical to buy bottled roasted red peppers.  Either is fine for this recipe.  I just happened to have some fresh peppers on hand, so there we are.  

The olives followed because I was kind of craving that salty, briny punch you get from olives.  Kalamata or green olives would have maybe been a better choice, but again, with cooking you use what you've got.  The arugula was there for some peppery green freshness and another texture component.

This recipe makes enough for 2-4 people depending on if it's a main or side dish.  I had enough leftover for lunch the next day.  It did need a little water to loosen up the sauce a bit, but other than that, it was just as good as the day before.

Creamy Roasted Red Pepper Pasta

2 red bell peppers, about 1 lb. (or equivalent from a jar, rinsed well before using)
1/2 cup cashew cream (recipe follows), or dairy sour cream
salt and pepper, to taste
hot sauce (I looooooove Frank's), to taste
sliced olives (I had canned, Kalamata would be the 1st choice)
a few big handfuls of baby arugula
8 oz. gluten-free (or whatever you have) pasta, cooked and drained

Roast the red pepper under a broiler or over an open flame until the skin is blistered and black. Place the peppers in a bowl and cover tightly with plastic wrap. Let sit for about 10 minutes. Remove the peppers from the bowl and use a dry paper towel, or your fingers to rub off the blackened peel. Cut the peppers open and remove the stem and seeds. Place in a food processor or blender. Add the cashew cream and process until pureed. If you need to, stop and scrape down the sides. Add a little water to thin it out if it's too thick. Taste and adjust seasonings accordingly.

Put the pasta in a serving bowl. Top with the sauce and stir to coat. Add the sliced olives and arugula, toss gently. Serve warm or room temp.



My sweet little Betta is always near me when I'm cooking and taking pictures.  One day that girl will have to get a blog of her own. :)  Isn't she gorgeous?!  I can't get over her.


On the side of my pasta I ate a pretty orange.  I don't know where these hailed from (probably CA), but they were so juicy and sweet.  We ate them in a flash.  They didn't last long.

Tania's Birthday.


This is my dear, sweet friend Tania who I met years ago when I still lived in New York.  I've mentioned her a few times before.  She is one of the greatest women and mothers I know.

One of my favorite memories of Tania was when she came to visit me and bring me dinner after I had my first baby in 2004.  She had only given birth three weeks before I had and she was bringing me dinner.  To this day I remember the homemade turkey soup, rolls, and the best brownies I've ever eaten in my life.  Tania's famous brownies topped with a layer of melted Andes mints, the inspiration for my Peppermint Bark Brownies.

Tania is a labor and delivery nurse and so she didn't even flinch when I told her how much trouble I was having with nursing and all about the crazy rash I had all over my body...and then I showed her.  We were fast friends.  A few years later we spent a most memorable and enjoyable Thanksgiving at her home with her family.  It is still my favorite TG to date.

Tania came into town last week to ski and celebrate her big birthday.  She e-mailed me a few weeks ago asking if I knew of any restaurants where she could have her party.  We e-mailed back and forth discussing different options, and while I never said it to her, I was hoping she'd bring me on board in some capacity to make some of the food.

She ended up deciding on The Lion House in Salt Lake City.  It's a beautiful historical mansion in downtown Salt Lake City near Temple Square.  It is a favorite spot for parties and receptions.  It's very lovely.


Tania asked me if I would be able to make a few cakes and cupcakes.  I was so happy she asked.  I didn't want to impose myself, which is why I didn't offer.  Nothing makes me happier than making food for people I love--especially birthday cakes.  The only request she had was that there was chocolate and fruit.  The rest didn't matter.  She let me do whatever I wanted.  It had way too much.

Happy Birthday, Tania!  Thanks for letting me be a part of your special day.

Dark Chocolate Mousse Cake--Devil's food cake filled with David Lebovitz's recipe for Chocolate Mousse from The Essence of Chocolate cookbook, frosted with semi-sweet chocolate ganache and topped with chocolate curls.  (For tips on making the chocolate curls, check out The Pioneer Woman's tutorial.)


Black Forest Cake--Dorie Greenspan's Cocoa Buttermilk Cake (I didn't add the melted chocolate this time), filled with a whipped cream cheese and creme fraiche mousse, sour cherry pie filling (I bought it because cherries aren't in season here in UT yet), and frosted with sweetened stabilized whipped creme fraiche.  I made my own creme fraiche by mixing 2 Tbsp. buttermilk into 2 cups of warmed heavy cream (about 100 degrees F.) and left it out to thicken overnight.  It is soooooo worth the extra time and effort.  (I'll post more about this at some point.)

Triple Lemon Chiffon Cake--three layers of light, airy lemon chiffon cake, filled with tangy lemon curd, frosted with lemon curd enriched stabilized whipped cream  (recipe from Sky High:  Irresistible Triple-Layer Cakes, check Mary's , The Food Librarian blog for awesome pics of what it looks like inside. I didn't get any pics of it.  You can find the recipe and more pretty pictures here.)




Phemomenon's Chocolate Strawberry Cupcakes--cocoa buttermilk chocolate cupcakes topped with a strawberry jam meringue buttercream and a chocolate dipped strawberry.  Luxurious.



Vanilla Bean Cupcakes--buttermilk vanilla bean cupcakes topped with vanilla bean IMBC (I adapted the cupcakes from a Martha Stewart Kids recipe from a long time ago.  I swapped out milk for buttermilk and used 1 vanilla bean in place of the extract.)

There was a table all set up for the cakes when I got to The Lion House.  My husband helped me arrange the cakes before we sat down to dinner.

One of the coolest things Tania did for the party was to have a candy table.  It was so whimsical I thought.  She had little bags for us to fill up with a sticker that said "40 is the new 20."  :)  I love the tiny stainless steel scoops.  She ordered them from Sur la Table.



I filled my bag primarily with jelly beans, Swedish fish and the Reese's pieces.  I haven't had those in ages.  I think I'm going to do something similar for my big 3-0 in four weeks.

I have to share a new tip with you.  I was trying to think of what I could do on the long drive to SLC with all the cakes and cupcakes in my trunk so they wouldn't slide around and smash into each other or the sides of the boxes.  I lined the bottom of the cake boxes with that squishy, rubbery shelf liner I use in my cupboards.  It worked like a dream.  Nothing moved.



If you are making and taking goodies somewhere, I totally recommend buying cake boxes from the party or cake decorating store.  I always thought it seemed liked a hassle.  But it's not!  It makes it so much easier.  The box pictured above is a 12" box.  I use that size for finished 10" cakes and it fits, as you can see, 16 regular sized cupcakes.  You can nestle the cupcakes closely to each other, but keep them from touching.  They will stay put with the shelf liner on the bottom.

San Francisco Pics, Part One.

Last month I was up late one night and I saw an e-mail from my friend Design Mom.  In case you haven't heard, Gabby and Ben Blair have moved to France with their 6 kids.  Seeing as she was unable to make it herself, she asked me if I would represent her at a Photography Girls Getaway in San Francisco hosted by Adobe.

I smiled as I typed my immediate reply.  Before I had even talked to my husband. San Francisco is my favorite city. Even more than New York City. Even more than Florence. A little trip to SF by myself?  To take pictures?  And learn how to use Lightroom?  YES.  I am pretty sure I used a lot of capital letters and exclamation points.  The timing was perfect and boy was I ready for a little break.

The Adobe ladies escorted us around the city in a limo van(!) while we stopped and shot pictures at some select sites. Then the next day, Julieanne Kost, who is unbelievably funny, trained us on Lightroom 3.  (More about this later.  I have so much to tell you and so many pictures to show you.)

I also need to tell you a little about LensRentals.com.  I approached them about sponsoring me with some lenses for my trip.  They graciously accepted and sent me some great lenses to fit my Nikon D300--the 70-200mm f/2.8 AF-S VR II and 105mm f/2.8 AF-S VR Macro.  Those lenses made my trip.  It was fun to play around with them and try out different angles and shots.  I'll share more about them this week too.  Totally, 100% recommend LensRentals.com and I plan on using them again and again.
